While we are waiting our license

Hey!

Hard to believe its been more than 2 months since I've wrote a new blog! As mentioned in the previous blog, yep time flies pretty fast!

Our brewery is in full production mode! Equipment is running great, beside some little issues we've had but life in a brewery wouldn't fun without those challenges thrown your way. Like last week our cooler compressor wasn't working right and I had to provide ice to our fermentation cooling unit which is a reservoir the cooler filled with water and a pump that pumps the water through stainless steel coil in each fermenter as it needs it. During the initial fermentation phase the temperature can go pretty high due to the heat generated by the yeast, it is very critical that the temperature is kept within a certain range otherwise we run great risk to produce off flavor in our beer jeopardizing its quality.

We had our cooling tech come in and change a filter and the compressor is back on track! No more ice needed.

We have successfully filled 2 fermenters and will be filling 2 more this coming weekend. The first fermenter of our Honey Brown Ale, our flagship,was sent to the conditioning tank over the past weekend. The flavors are right on but we missed the mark on the alcohol percentage which is 4.5% instead of 5%, it wont be much noticeable. We'll adjust in next batch :)

We also received our growlers, beside a big miss by the printer, they are beautiful! Thanks to Prescott-Russell United Counties for their great help in paying for the printing of the growlers, it means a lot to us to have this kind of support!

Fermenter #1 and #2 will be bottled in about 2 weeks. We are still waiting for the our selling license from AGCO but we don,t have any beer ready to sell yet, so the timing should be perfect!

A big thank you to everyone that  have helped us so far! Special thanks to those who bought in our Ambassador / Founder program which is buying 1000$ worth of beer in advance and also our major investors who made it so easy to get our financing inline. We are so happy to have been able to build our brewery without the help of a bank but through people that believes in us and are willing to be part of it big time! THANK YOU!

Time flies! Le temps passe vite!

Hey!

Wow que le temps passe vite! déjà au delà d'un mois que j'ai pas écrit dans notre blogue. Disons que le temps avancent de façon pas mal rapide. Surtout avec la construction qui va de bon train. Nous avons complété la peinture en fin de semaine merci à Julie, Yvon, Nicole et Darquise d,avoir pris du temps pour venir nous aider, Michel et Ben ont aussi fait parti de l'équipe de peinture. Les couleurs choisis sont absolument MAGNIFIQUE! et rend justice à 100% envers notre thème. Nous sommes très content!!!


De mon coté j'avance sur le control panel un gros merci à mon beau frère Frank d'avoir consacré du temps pour l'electrcité en générale ainsi que me guider dans la construction de ce control panel, voici un aperçu de l'intérieur :


Nous sommes "on target" avec notre ouverture en juin 2012 vous allez être en mesure de voir des affiches au courant du mois d'avril.

The Build Part 1

Morning!

Needless to say the feeling we had upon entering for what will be our brewery location for some years to come, was literally WOW! We have worked so hard to finally enjoy this moment.


We got our fermentation tanks in the very first, yep we lose no time! 


The article in Le Reflet and also in Le Droit fueled A LOT of talks around town and beyond. Although everyone believed our brewery would become reality, it wasn't confirmed since we had no location. Now this is thing of the past! Kind of funny how some get so excited about our brewery that they read halfway the article and drove to our store to hopefully get a hold of our beers! Unfortunately we have none for sale right now, hold on people! :)

The past weekend we framed our cold room, yes it is big considering the brewery sq. ft. but for a small brewery cold space is always an ongoing issue, we will outgrow it there is no doubt, at this size we will be good for hopefully at least 1 year.


Brewers Association of Canada has accepted our application and we are now a member along with other breweries in the country, it gives us chills to now be part of this family.

First station!

Hello first blog!


Looking forward to commit to blogging about how things are going with our brewery startup!


It's been a long winding track to get where we are now, purchasing equipment, finalizing our corporate structure and also getting all 3 partners to agree on our mutal agreement... bah legal stufff... BUT it has to be done and it has to be done the right way from the start to prevent jeopardizing the brewery and all the efforts we have put in so far.


For those that have just learned about Cassel Brewery, this vision started 10 years ago when I started brewing with those beer kits you buy at the wine store. I quickly became bored about that process. So I skipped a couple years and went back into it, this time from scratch. That means buying the raw ingredients, crushing the grains, stepping it in water and well.. make beer!


In 2006 I thought about Cassel Brewery where I would embrace the railroad history of Casselman through a brewery right here in town. I contacted, Michel "Roots" Racine, who is now one of the partner in the brewery, to make a logo that would incorporate some of the railroad history in Casselman, which was the first stop between Ottawa and Montreal at the time.... so yes...  quite a special town!


The logo presented was love at first sight and still as of today and it is what fueled our motivation toward building a nano commercial brewery.


Recipes are in place, people are amazed by our beers, we can't wait to open our store!


We plan on opening in June 2012.


Stay tuned... more exciting news to come! I want to make this blog a diary of the buildup toward our opening.
